Kitchen Week(s) August 26 – September 8

In the past few weeks I had some very good times in the kitchen! First, I bought cheese when I went to Nyamagabe, as well as milk. I tried to use the milk to make mozzarella but ended up with some really delicious ricotta instead. Second, I found out that our health center sells mushrooms, and bought an entire kilo of them. In the space of 5 days, I believe I must have eaten 1.75 lbs of mushrooms and 2 pounds of cheese. I am going to make myself so sick when I come back to America….

 

Highlights from the kitchen:

Cheesy mushroom rice

Dirty rice with mushrooms

Cream of mushroom soup

Pizza with home made ricotta

Ricotta mixed with nutella and bananas (tastes just like cheese cake!)

Plantain burgers

KitchenWeek: may 19-26

I tried out a couple of new things this week:

-Pasta with a veggie cream sauce (made from vegetable soup thickened with rue)

-Cornmeal and sorghum porridge with cinnamon (sounds bland but is actually really good)

-Fish stew with black sorghum bread (I used the little dried sardines that come from the Lake regions of the country)

 

And one really excellent day last week:

-Grilled cheese with spicey cucumber-tomato salad

Kitchen Week- March (not really a week, I know)

Unfortunately I haven’t had time to keep up with Kitchen Week as a weekly feature, but I’m going to try harder to be regular about that. Here’s the highlights of my kitchen during March:

Pickled green peppers (these were really good! I need to find some more jars so I can make a bigger batch next time)

Refried beans + guacamole + tortillas

Stalingrad Special (potatoes, cabbage and carrot stew)

Biscuits

Cornbread and Chili (again)

Kitchen Week: First Edition

I’ve decided to start a new feature- kitchen week! I’ll try to keep tabs on anything new or interesting I am cooking during the week, and if anyone out there has questions about anything I can post the recipe (although most of the time I’m winging it.)

Rwandanights Kitchen Week 1: Feb 16-23

Cornbread (using corn and cassava flour)

Vegetarian Chili

Pickled green peppers (a first attempt at pickling- we’ll see how it goes!)

Curry rice with green peppers
